Thank you for your post.

 

Currently NVivo 10 does not support tracking of content that is not coded. NVivo 10 will only keep track of content that has been coded.

 

I can offer you an alternate method to try and get a similar result.

 

Open your document source file and turn on Coding Highlight (View > Highlight > Coding for All Nodes). Now export your source by right clicking and choosing Export Document. After exporting your new document will have all the content that has been coded highlighted. You can then delete all of these highlighted texts and have a document with only text that has not been coded.
